2 Art. l. olive oil

1 clove of garlic

3 large eggs

salt and freshly ground pepper to taste

1/3 glass grated mozzarella

1/3 glass crumbled ricotta

1/3 glass grated Cheddar or Gruyere

1 Art. l. chopped fresh parsley

Preheat the oven. In a skillet (25 cm diameter), heat the olive oil over medium heat. Throw in the garlic clove, cut into 2-3 pieces and cook until golden brown, then you can remove the garlic and discard. By flavored with garlic butter, add the beaten eggs, salt, pepper to taste. Evenly pour the eggs with grated cheese and place the pan in the oven for 3 minutes to melt cheese. Sprinkle with parsley and serve.
