Pork fillet with sauce and orzo

4 servings
2 whole pork tenderloin
400 g orzo (small, the size of a rice grain pasta)
1 glass tomato sauce
3 glass Hot water
2 tablespoons olive oil Gaea DOP Kalamata Extra Virgin
1 large onion
Salt
Freshly ground black pepper
Tzatziki sauce:
200 g natural yoghurt
some yogurt to choose? we'll show
4 tablespoons olive oil Gaea DOP Kalamata Extra Virgin
2 tablespoons water
1 clove of garlic
2 cucumber
Salt
Freshly ground black pepper
Sprig of thyme
Pour into a deep frying pan 1.5 tablespoons of olive oil and fry the chopped onions. Add orzo, tomato sauce and hot water. Simmer over low heat until tender and complete evaporation of the liquid. Salt and pepper to taste.
Fry the tenderloin in olive oil until golden brown. Remove the pan from the heat and let the meat "rest" for 5 minutes.
Cut the tenderloin into thin slices and cook in the same pan for 5 minutes (as an option, you can put the pieces of tenderloin in a heated 180 degree oven and bake for 7 minutes).
Tzatziki sauce: in a blender, combine the yogurt, olive oil, water, finely chopped clove of garlic and cucumber. Salt and pepper to taste. The sauce is ready!
Put on orzo dish, place slices on top and pour the sauce clippings Tzatziki. Garnish with sprigs of thyme and drizzle with olive oil.
