Vegetable stew in a hurry
700 g beef
3 potatoes
3 tomatoes
2 carrots
2 bulbs
1 eggplant
2 pepper
Salt, pepper, Basil, oregano
Meat, potatoes, onions and eggplant cut into cubes. The carrot slices, pepper strips and tomato slices. In a pot saut the onion with the carrots. To put on top half of the meat, then half the potatoes, half the tomatoes, half of the pepper and half the eggplant. Then again in the same order: meat, potatoes, tomatoes, peppers, eggplant. Add water, pepper, salt and cook on high heat for 40-50 minutes Sprinkle with chopped herbs.
