Blackcurrant jam
Ingredients:
1 kg black currant berries
1.5 kg syrup - (Water - 4 cups sugar -)
Berries for blanching dipped in boiling water for 3 - 5 minutes. This water, decanted and the use
form a syrup for cooking. As soon as the syrup boils it dipped berries and cook for 5-7 minutes. Jam cooled and allowed to stand for 6-8 hours, then repeated once more, and so should be repeated 3-4 times.
