Salmon with onion marmalade
2 salmon fillets
2 tablespoons olive oil
50 g orange juice
1 red onion medium size
20 g fruit vinegar
salt and pepper to taste
Cut the onion into 8 slices, place them in heated oil in a pan and add salt and pepper, without removing from heat. After a few minutes, add the orange juice and vinegar, cover and cook for 40 minutes on low heat.
Rub the salmon fillets with salt and pepper and fry in olive oil. Serve salmon with onion marmalade.
