Cod with tomato sauce
1 kg cod fillet
500 g tomatoes peeled
3 garlic cloves
3 glass vegetable broth
2 celery
1 onions
a handful of pine nuts
1 bunch of Basil or parsley
black pepper
salt
Cut the fish medium sized pieces, season with salt, remove half an hour in the fridge.
Finely chop the celery and onion, crush the garlic, heat the oil in a skillet, fry the garlic and the vegetables, remove the garlic.
Rinse cod, put the vegetables in the skillet and fry for a few minutes.
Add the chopped tomatoes, simmer for 20 minutes
Before serving, sprinkle the cod in a tomato sauce with nuts and chopped parsley.
