Vegetable salad with chanterelles
For this recipe you will need:
250 g Chanterelles
250 g cherry tomatoes
1/2 pcs. onion (red)
1 garlic - clove
2 pcs. green onions
1 Art. l. lemon juice
1/2 h. l. lemon zest (grated)
1 Art. l. pine nuts
3 Art. l. olive oil
10 g Parmesan
salt, pepper - to taste
Wash mushrooms. Saute, stirring occasionally, 1 tbsp. l. vegetable oil 10 min. (Until tender). In the end, add finely chopped garlic, pour the lemon juice and season with salt, pepper and zest. Cool.
Wash tomatoes and cut into four parts. Finely chop the onions. Green onions cut into pieces of 3-4 cm.
Mix all ingredients, season with salad oil, salt and pepper to taste, to shift in a salad bowl, sprinkle with pine nuts and Parmesan cheese thinly planed.
