Chicken fillet with pine nuts
4 chicken fillet
80 g butter

For the filling:
1 bunch leeks
3 tbsp. bread crumbs
2 tbsp. pine nuts
1 egg yolk
100 g cheese
2 tbsp. parsley
salt
ground black pepper
1/2 juice and finely grated lemon peel
1. Preheat oven to 200oC. Chicken rinse, dry cloth and each fillet to make a deep non-through incision"pocket".
2. Melt in a frying pan 1 tablespoon butter and fry the chopped onion until soft. Remove the pan from the heat. Put the fried leeks in a bowl.
3. Pour into a bowl with onion, bread crumbs, pine nuts, add the egg yolk and grated lemon zest.
4. Add the parsley, salt, seasoning and grated cheese. Sprinkle with lemon juice and stir. Using a teaspoon fill filling pockets in chicken fillets. Put on a greased baking sheet. On each fillet to put a piece of butter. Bake in the oven for 35-40 minutes, basting occasionally formed juice.
