Chicken salad with pine nuts and goat cheese
1 large chicken breast, peeled and sliced strips
2 Art. l. honey
2 h. l. mustard
140 g goat cheese
110 g toasted pine nuts
head lettuce
balsamic vinegar
olive oil
salt and freshly ground pepper
Mix together honey and mustard (mustard is better to take the grain) in a bowl, add the chopped chicken breast into strips, stir well to the meat was uniformly covered with honey sauce. Put the meat in a hot frying pan, fry on all sides for 3-4 minutes on each side.
Mix together one part balsamic vinegar and two parts olive oil with a little salt and pepper. Place the lettuce leaves on a serving dish, pour dressing (oil and vinegar). Top with fried chicken, goat cheese crumble and sprinkle with pine nuts.
