Cake-snack with red cabbage
500 g # red cabbage with apples
6 # squares of frozen puff pastry
100 g # pine nuts
1 # / 2 cups soy yogurt

# Preheat oven to 220 C.
# Thawed puff pastry.
# Grease six molds for tartlets or cupcakes.
# Make soy ricotta cheese soy yogurt, butter, cashew butter, lemon juice, yeast, pinch of nutmeg and salt. Whisk.
# Toast the pine nuts in a dry frying pan until Golden brown.
# Place a sheet of puff pastry into each form.
# Trim the excess with a knife.
# Fill the dough with a filling of red cabbage with apples.
# Put a few spoonfuls of ricotta on top.
# Sprinkle a few pine nuts each and powdered thyme.
# Put in the oven to bake for 15 - 20 minutes, until the dough is slightly Golden in color.
