Kheer, rice pudding
What you need:
1 glass short grains of rice
7 glass milk
what kind of milk should I choose? we'll show
3/4 glass sugar
pinch of cardamom
15 stamens of the saffron
a few drops of rose water
10 dates
a handful of almonds and unsalted pistachios
Almonds and pistachios coarsely chop and fry in a dry skillet, 30 seconds. The dates, remove the seeds, pulp, grind, mix with nuts.
Rinse the rice in several waters, pour 1 Cup of cold water for 30 minutes to Infuse the water with the rice in a large heavy-bottomed saucepan, bring to boil and cook until the rice has absorbed all the water. Reduce the heat to low, pour in the milk, stir and cook for 1.5 hours, stirring occasionally so the rice doesn't stick to the bottom of the pan.
For 10 minutes until ready to put sugar. Cooked rice (it should turn into mush) remove from heat, add the cardamom, rose water and crushed, soaked in 1 tbsp milk saffron. Sprinkle with nuts and dates and serve hot or cold.
