Salted duck
Required products:
2 kg duck (about ) - 1 piece
3 tbsp. salt
1 tsp. fennel seeds
1 tsp. cinnamon ground
20 g leek finely chopped
5 g ginger root chopped
parsley
The duck carcass rinse well, Pat dry, RUB inside and out with half the normal salt and leave for 5 hours.Pour the duck with water so that it is completely coated, place on heat and bring to a boil, remove the foam.
Add the garlic, ginger, fennel, cinnamon and remaining salt. Again bring to a boil and continue to cook on low heat for 40 minutes. Duck ready to cool and cut into portions.
When serving, pour over the duck strained broth to make greens.
