Language in Madeira sauce
Required Products:
1.5 kg beef tongue
1 onions - head
450 g celery root
1 Art. l. wheat flour
some flour to choose? we'll show
2 Art. l. butter
2 h. l. sugar
1 pcs. bay leaves
3 Carnation - bud
5 Art. l. cream
1/2 glass Madeira
2 h. l. lemon juice
cayenne pepper powder, salt to taste
Language boil until cooked with the addition of chopped onion and salt. 30 minutes before end of cooking add the coarsely chopped celery. Ready language down into the cold water, peel. Half the broth formed during cooking pour off language in the remaining place prepared by language and warm it.
For the sauce, saut the flour in butter until golden brown, add the sugar, warm. Gradually enter the broth, add the bay leaf, cloves and heated on low heat for 15 minutes. At the end of cooking, type cream, Madeira, lemon juice, salt, pepper.
When submitting language slice, place on a plate beside the sauce. Garnish with celery language, complete your greens.
