The language in the sauce with Madeira
Required products:
1 kg beef tongue
1 PCs celery
1 onion - head
1/2 glass the meat broth
2 tbsp. Madera
2 tbsp. cream
2 tbsp. butter
1 tbsp. wheat flour

1 tsp. sugar
2 tbsp. parsley chopped
3 clove - Bud
1 PCs Bay leaf
black pepper

Language soak for 8 hours, then cook for 2 hours in water with onions and celery.
Ready language immediately dipped in cold water and not allowing to cool, peel the skin, then cut into portions and warm the broth in which it was brewed.
For sauce to the melted butter (1 tablespoon) pour the flour, sugar and fry until Golden brown. Slightly cool, gradually pour, stirring the broth, add the cream, Madeira, salt, pepper, Bay leaf, cloves, boil for 10 minutes, drain and season with the remaining oil.
When applying the language to lay out on a dish, pour sauce over and sprinkle with parsley.
Garnish with boiled vegetables.
