Sirloin with cream sauce
500 g tenderloin of beef
250 g heavy cream
250 g beef broth
150 g roots (carrots, celery and parsley)
80 g butter

50 g onions
40 flour
40 g sugar
30 g bacon
2 clove Bud
2 juniper berries
1 Bay leaf
vinegar or lemon juice
salt
Lard the meat with strips of bacon, RUB with salt.
Onions and roots, chop, fry in butter, add the meat and fry it on both sides, add the spices, pour in the broth and cook until tender on low heat. Then remove meat from broth and cut into pieces.
Dry flour until Golden, add the part of the broth, gradually pouring in the remaining broth, boil until thick. The sauce through a sieve and add the cream, lemon juice and sugar.
Pour over tenderloin creamy sauce, heat and serve.
