Kabsa is the national dish of Saudi Arabia
2 glass basmati rice (long, thin) 1,5
1,300-1,500 kg 1 chicken, weighing
2-4 garlic cloves
2 onions medium/large
2 juicy, ripe, red tomatoes
1-2 tbsp. tomato paste
1 carrots
3-5 things cardamom
1 tsp. 3 cinnamon sticks ( about a finger long, and can ground cinnamon, then about )
1 big Lumi (dried lemon)
tsp. 2 full. curry (preferably Indian)
tsp. 2 full Bharat (seasoning mix for lamb or meat)
a couple of leaves of Bay leaf
salt
olive oil
Ghee (vegetable oil - not required)
The chicken is cleaned, washed, divided into 4 parts, put in boiling water. Spices Bay leaf, cinnamon stick, 1 onion,3-4 pieces of cardamom, salt. Cook until tender, usually an hour.
2 cups rice, washed in 5 waters. Drain the water.
Garlic is crushed with a knife and finely chopped (not chesnokodavilku!). 1 onion, peel and finely dice. Garlic combine with onion and fry in a couple of tablespoons of olive/vegetable oil in the pan, which is then going to cook.
When the garlic and onions will become a Golden color, add the tomatoes and carrots. Carrots and tomatoes are pre-peel the skin and grate them finely grate or chop in a food processor.. Then 2 tablespoons of tomato paste+ a couple of tablespoons of chicken broth, the remaining cardamom, Lumi, curry, seasoning mix for lamb. Simmer until tender tomatoes, about 5 minutes.
Pour the washed rice into the mixture, stir.
Fire increase, pour boiling chicken broth (check salt!!!) 1 finger above the rice. Let simmer on high heat for 3-5 minutes
Cover, lower the heat to minimum. Simmer until tender.

If a little bit dry, you can add a little broth, a couple of tablespoons over the entire surface.
