Jam apricot No. 1
You will need:
1 kg apricot
1 kg sugar
0,5 tsp. citric acid
1,5 glass water
Strong, dense fruit, wash, remove seeds, blanched in hot water 2min., cool in cold water. Of sugar and water (watch the sugar didn't slightly burnt) cooked syrup. Then pour the hot syrup on low heat cook for 10 minutes. Leave for a few hours to cool. Repeat 3 times for 5 minutes before end of cooking to add citric acid.
