Salmon salad with grapefruit and arugula
For the recipe You will need:
400 g salmon (fillet salted)
1/2 tsp. salt
50 g sugar
1 tsp. white pepper (ground)
50 ml wine vinegar (white)
50 ml olive oil
1 garlic - clove
1 PCs lemon
2 PCs onion shallot
100 g arugula
50 g Parmesan cheese (grated)
1 PCs grapefruit (red)
8 PCs olives, green, pitted)
Mix salt, sugar and pepper. Fish fillet coated with this mixture on all sides. Put in a deep bowl, sprinkle with a mixture of vinegar and olive oil. Leave to marinate for at least 1 h at room temperature.
Grapefruit peel and separate into segments. Garlic, peel and chop the lemon cut into thin slices (with peel). Arugula rinse, Pat dry, shallots peel, chop. Salmon out of the marinade, cut into thin strips and arrange on portions of the plates. Sprinkle with chopped shallots, garnish with arugula, green olives, slices of grapefruit and lemon.
Pour the remaining marinade from the fish and sprinkle with grated Parmesan cheese.
