Salad with Eggplant
4 medium eggplant
4 medium tomatoes
2 sweet pepper
1 onions
herbs (to taste)
vegetable fat
salt
Pierce eggplant with a fork different sides, cook in the microwave so that they do not become too soft, cooled eggplant cut into cubes.
Diced tomatoes, peppers, finely chopped garlic and fresh herbs.
Combine all ingredients prepared.
Dress the salad with eggplant vegetable oil, salt and mix well.
