Salad with shrimp, rice, almond and mango
350 g peeled shrimp
175 g long-grain rice
25 g shelled almonds
1 mango
1 tbsp. chopped fresh mint
Filling:
1 clove garlic
1 tbsp. olive oil
2 tsp. lemon juice
1 tsp. honey
pepper
salt
Rice put in salted boiling water, bring to boil, boil for 35 minutes until soft, drain the water, put the rice in a plate.
Shrimp boil until tender, add the rice.
Combine all ingredients for the filling, mix, beat well, add the rice with shrimp, stir.
Peel mango, peeled, pit removed, cut into slices and add to the salad, chop the green onions, chop the mint and almonds, add all the salad, stir and serve with a salad with shrimp, rice, almond and mango to the table.
