1 glass sugar
50 g cocoa
Proteins separated from the yolks. Yolks fork with 1/2 cup sugar. Enter in the egg yolks with the sugar sifted flour (or flour and starch) and mix until uniform.
In a separate bowl, using a mixer, whip the whites. First, whisking slowly and then increase the speed to maximum and beat into a thick foam. Without stopping beating small portions enter the remaining sugar (0.5 cups) and cocoa.
1/3 of the beaten egg whites add to the yolks mixed with the flour, and mix gently, not in a circular motion, and raising the dough layer by layer, from top to bottom. Enter the remaining whites and mix gently as the dough from the top down. Move the dough into the mold and bake at 250 degrees C 30-40 minutes. Lubricate your favorite cream. Garnish with food dyes.
