Dessert pancake orange "Krepp Suzette"
Pancakes:
500 ml cream 33-35%
320 ml milk

240 g flour
60 g powdered sugar
4 eggs
1 tbsp. vegetable oil
1 tsp. salt
Sauce:
100-150 g butter
60 ml rum/brandy
60 ml orange liqueur
40-50 g sugar
2-3 orange
Combining all the ingredients for pancakes, mix the pancake batter, the usual way to cook thin sweet pancakes.
Remove the zest from the oranges (you will need about 20 g), squeeze the juice (you need 180 ml).
At the bottom of a dry Teflon pan pour in the sugar and heat over moderate heat until caramelization of sugar.
Smearing the edges of the pan with butter, melt it completely, it should mix with caramel.
Put in a pan with the orange zest, stir, put about 1 minute, pour the edge of the pan juice, stir, cook the sauce for another 3-5 minutes until thick.
Add to the sauce liqueur, brandy or rum, cook until the alcohol has completely evaporated.
Put in the prepared sauce pancakes to warm up.
