Cake with blueberry wine mousse
50 g blueberries
2 ready-made biscuit
3 tbsp. blueberry syrup
To prepare the mousse:
200 g powdered sugar
6 egg yolks
1,5 glass heavy cream
1,5 glass dry white wine
3 tbsp. gelatin
Soak the gelatine in cold boiled water (6 times its weight), until it swells, drain excess liquid, dissolve the gelatin in a water bath.
The egg yolks to mix with powdered sugar, pour in the wine, to warm up the mixture, but not to bring it to a boil, then add the gelatine, let the mixture cool to combine everything with whipped cream.
Sponge cake put in the form, imbued with blueberry syrup, put on it ? mousse, sprinkle blueberries on top lay the second crust to soak it with syrup, put the rest of the mousse, remove the cake out in the cold.
Before serving the cake with blueberry wine mousse is removed from the mold, cut into portions and is made mashed blueberries, mint leaves and berries.
