Steam chicken with mushrooms
800 g chicken (boneless pulp)
100 g mushrooms or white mushrooms
1 h. l. salt
1 h. l. sugar
1 Art. l. dry sherry
1 h. l. wheat flour

2 fresh ginger root - slices
1 h. l. vegetable oil
ground black pepper
1 h. l. sesame oil
Cut the chicken into small pieces and mix with salt, sugar, sherry, flour.
Finely chop the peeled ginger and mushrooms. Grease an ovenproof dish with vegetable oil. Place the chicken pieces on a platter, sprinkle with chopped mushrooms and ginger. Add pepper and sesame oil. Put the dish in a steamer for 20 minutes. Serve hot.

It is best to use the meat of young chicken. Steaming retains a soft texture and delicate flavor of the dish.
