1.2 kg loin, rolled into a roll

For the marinade:



150 ml olive oil

1 glass tablespoon wine vinegar

2 cloves of garlic crushed

2 sprigs of rosemary

1 glass teaspoon juniper berries

salt and freshly ground black pepper

Place the roll in a saucepan with a tight-fitting lid. Mix all the marinade ingredients and pour this mixture of pork. We cover with a lid and place in the refrigerator for a day, occasionally turning roll.

The next day, preheat the oven to 180 � F. Add the milk in a saucepan and place in oven uncovered for 1 hour. Then increase the heating to 200 g C and continue cooking for another 30 minutes, until the roll out of a punctured leaks out clear (not pink ) juice.

Roll on a plate covered with foil keep warm while preparing the sauce will. Collect the fat from the liquid remaining in the skillet. Strain it into another pot and boil until syrupy sauce. Cut roll into thick slices and serve with the sauce and garnish with parsley.

Serve pork with crispy fried potatoes. On top garnish with boiled carrots glazed in general form and a sprig of parsley.
