Roasted quail with mushrooms
2 quail
2 tbsp. melted butter
200 g fresh mushrooms
1 tsp. brandy
30 g bacon
50 g broth
salt
ground pepper
herbs for decoration
2 baton - slice
20 g butter
Loin quail cover with thin slices of bacon and fasten with wooden pins or threads, sprinkle with salt and pepper.
Roast quail in a saucepan with half the norm of melted butter with the lid closed, until Golden brown.
Mushrooms cut into slices, fry in the remaining oil.
From skillet, drain off the fat, pour in the cognac and the broth, boil and strain.
Sliced loaf fry in butter and place on a dish.
The obtained croutons put quail, pour the sochka and decorate with greenery around lay the fried mushrooms.
