Eggplant in pots "in Portuguese"
200 g Eggplant
30 g cheese
20 g onions
2 tomatoes
2 cloves of garlic
1 Art. l. flour

butter
bay leaves
thyme
ground black pepper
salt
Slice the eggplant circles 1 cm thick, pour boiling water over them and discard in a colander, drain the water when put under the pressure of eggplant and leave for 20 minutes.
Finely chop the onion and fry in butter, add the chopped garlic and tomatoes, cut in half, as well as thyme, sugar, bay leaf, salt, pepper and simmer until the sauce thickens about half an hour. When the sauce has cooled slightly, rub it through a sieve.
Breaded eggplant in flour, fry in butter.
In clay pot on the bottom pour a little sauce, put a layer of cheese, cut into thin slices, then a layer of eggplant, cheese again, then eggplant and so on to fill the pot.
Pour eggplant in pots "in Portuguese" sauce, cheese crumble on top, mixed with breadcrumbs, drizzle with oil, eggplant bake until cooked in the oven.
