Pea soup with smoked goose or duck
200 g goose or duck (smoked)
280 g Shelling peas
40 g flour

40 g fat
160 g onion
120 g toast
greens - to taste
Cooking Instructions:
Peas to sort and wash, then pour the water. Add peas to the bird. Cook smoked poultry as long as it is tender and peas do not seethe to puree the state. Finely chop the onion, fry on fat, remove from broth and put in the soup for 15-20 minutes before it is ready; at the same time fill the soup with white sauce and bring to taste.
When serving put in a bowl and sprinkle with a piece of poultry soup greens. Separately submit to the soup croutons of white bread, cut into small cubes.
