Asian salad with chicken and mango
1 small onion, finely chopped
1 garlic clove, crushed
2.5 cm ginger, peeled and finely chopped
l 1 h motogo coriander, cumin and spice mix garam, Masao
l 1/2 h mild powder chii and turmeric
l 4 article Jivkova Masa
4 chicken breast without skin and bones
l 1 tbsp chopped fresh coriander (cilantro)
1/2 lemon juice
150 g young salad leaves
1 mango, chopped
1 red pepper, deseeded and finely chopped
Mix the onion, garlic, all the spices except the fresh coriander, 2 tablespoons oil and 2 tablespoons water in a food processor. Put the chicken into the bowl with the marinade. Cover and refrigerate for 4 hours.
Preheat the grill. Get the chicken from the marinade and place on baking sheet. Bake under the grill for about 10-15 minutes, turning. Cut into strips.
Mix the remaining oil, fresh cilantro and lemon juice. Season to taste. Place in a bowl lettuce, drizzle with dressing and stir. Add the chicken, mango and red pepper, drizzle with the remaining dressing and serve.
Note
This spicy marinade is also great for large shrimp marinate them only 1 hour.
If you cut the chicken against the grain into poloski thickness of 1/2 cm, then the chicken is more tender.
