Meatless rice salad with cucumber and salmon
150 g cucumbers
120 g rice
40 g green onions
1 Bank of canned salmon / chum salmon / pink salmon
1-2 Art. l. vegetable oil
1 h. l. lemon juice
Boil the rice until cooked, it should turn out crisp, let cool.
Cut into strips or rub on a coarse grater cucumber.
Fish mash with a fork, but not too much.
Chopped green onions and mix with fish, rice and pickles, add vegetable oil and lemon juice, you can also add the liquid from canned food from the can and mix.
Serve lean rice salad with cucumber and salmon for lunch or dinner.
