Rice salad with smoked salmon
For this recipe you will need:
400 g salmon (smoked);
400 g Figure (a mixture of white and wild rice, cooked);
100 g peas -
some peas to choose? we'll show
100 g corn;
100 g green peas (young pods);
50 g cucumber (peeled, sliced);
8 asparagus (green) - stems
1 Art. l. dill (chopped);
2 Art. l. lemon juice;
2 Art. l. olive oil;
1/2 h. l. Dijon mustard;
1/2 h. l. honey;
for garnish:
greens (young) - to taste
Mix rice, peas, corn, peas in pods and cucumber. For the sauce, mix together the lemon juice, parsley, olive oil, mustard and honey. Pour the sauce into the rice mixture, stir and divided into 4 parts.
Pieces of salmon put on the rice mixture, put on 2 stalks boiled asparagus. Sprinkle with freshly ground black pepper and garnish with greens.
