200 g coarse salt

1 duck breast

dried rosemary

ground black pepper

A simple but original French recipe of dried duck breast.

Breast well cleaned to remove excess fat without cutting the skin.

Take a plastic container with a lid, cover with half the salt, put on top of the breast, the top pour the remaining salt, cover, remove the 12 hours in the refrigerator.

12 hours later to get the breast, rinse thoroughly, dry wipe, rub needles of rosemary and black pepper, then wrap a clean linen cloth and clean the refrigerator.
