Lean chocolate cream
300 ml water
300 g sugar
100 g cocoa powder
50 g black lean chocolate
1 tsp. potato starch
Chop the chocolate, put in a saucepan, add cocoa, starch and sugar in two doses slowly pour the water, turn on low heat, cook 10 minutes, stirring occasionally.
Remove from heat, allow to cool, stirring occasionally, then pour lean chocolate cream into the container for storage.
To use the cream for any baking before serving, it can be heated in a water bath.
