picture - Suckling pigGood wash, scrape, dry with paper towel carcass, RUB with salt inside the pig, brush with melted butter, put back up on the pan and add 1/2 Cup of water. Foil closed…set ears and nose.

Place in a preheated 170 degree oven and cook for about 2 hours, constantly pouring fat. For 20-30 minutes until done remove foil. The pig is ready, when the puncturing it implies the clear juice.

Remove the pork from the oven, allow to cool, cut into portions and serve with horseradish, mustard or your favorite sauce.
Cooking time: 120 minutes
