Top or side of the rear feet washed and cut into portions without cutting the meat thoroughly so that they survived the base (fan). Bacon and onion mince, mix with chopped mushrooms, breadcrumbs, salt, pepper and fry all together, adding a little milk or cream. A lot of cool, add the egg yolks. Between the cut layers of meat put the filling. Meat compress, giving it its original shape, wrap a clean white thread.

Cooked so the meat is first fried, then add hot broth or water and simmer, covered over low heat until tender. Before serving, remove the thread.
