1 pcs. duck

salt

100 g bacon

50 g butter

100 g roots

50 g onion



2 pcs. sour apples

2 pcs. tomatoes

4 Carnation - bud

6 black pepper - peas

100 g red wine

30 g wheat flour

1 pcs. lemon

Rub the duck with salt inside and out.

For the sauce, melt the sliced bacon, add the butter and fry the finely chopped onion and roots. Pour a little water, add peeled and sliced apples and tomatoes, spices, wine.

In a roasting pan with the sauce, place the duck and cook in the oven, covered with a lid. When the duck will become almost soft, remove the lid and let the bird browned.

Finished duck, remove the broiler, divide into portions, the sauce Stir in the dried flour, diluted with water, and boil on low heat. Strain, add cranberries, warm up and then put the sauce duck, simmer for 5-7 minutes. Serve duck resting on each portion piece on a slice of lemon. Garnish dumplings.
