Casserole "Kugel" with eggplant
5-6 chicken eggs
4 medium eggplant
1 big tomato
2-3 tbsp. flour

1 tbsp. mayonnaise (hill)

dill, green onions, parsley, Basil
Not steeping and without peeling, slice the eggplant into strips, fry in a pan with hot oil until Browning.
Finely chop the herbs.
Eggs and 2 tbsp. flour, mayonnaise, combine, mix thoroughly with a mixer.
Small cubes cut the tomatoes, without peeling the skins, add the eggplant and fry for 5-6 minutes until evaporation of tomato juice from the tomatoes.
Add greens, stir, pour the vegetables egg weight, level surface, put the Kugel in a preheated 200 degree oven, bake until tender about 40 minutes to check the readiness by using toothpicks.
Serve casserole "Kugel" with eggplant hot with a side dish of mashed potatoes or another.
