Eggplant stew
3 eggplant
2 large pod of pepper
5 large tomatoes
onions or garlic
olive oil
salt and pepper
the mint leaves
lemon juice
Chop the peeled vegetables pieces and put in a pan with olive oil and onion (or garlic). Add salt, pepper, add a few mint leaves and lemon juice. Simmer for about 30 minutes
