Salad with chanterelles
Required Products:
600 g Chanterelles
2 Thyme - sprigs
For the sauce:
500 g anchovies
1 Art. l. lemon juice
1 garlic - clove
1 Art. l. chopped basil
2 pcs. egg yolks
3 Art. l. olive oil
2 Art. l. chopped parsley
Cook the mushrooms until tender in salted water, drain the broth adding timyan.Zatem, mushrooms cool.
For the sauce, anchovies finely chopped, add the lemon juice, garlic, basil, stir and refrigerate. Whisk the egg yolks with oil, connect with a mix of anchovies and stir. Ready sauce cool for 30 minutes.
When submitting mushrooms mix with sauce and sprinkle with herbs.
