Mini sandwiches with homemade chicken pate
500 g chicken liver
200 g olives
170 g butter

3 small onions
3 sprigs of parsley
3 tbsp. brandy
2 tbsp. olive oil
1 tbsp. additionally butter
1 pinch of nutmeg
black pepper

Put olives on the Board, with the flat side of a knife to crush, to remove the seeds, chop as finely as possible.
Cut each chicken liver in half, Pat dry.
Thin rings chop the onion, put in a pan with a thick bottom and fry in a mixture of 1 tbsp. of butter and olive oil, add to the onions liver, stir fry for about 7 minutes, add salt and pepper, add the chopped parsley leaves.
Cognac heat and pour into the pan, igniting a long match, cover the pan with a lid for a few seconds.
Grind liver and onions in a blender, adding nutmeg, then add mashed butter and again mix.
Add in the paste of olives, stir, remove at least 2 hours in the cold.
Pulp bread sculptured cut or cut glass, fry in butter on both sides.
