10 kg mushrooms
400 g salt
40 g garlic
35-40 g allspice
35 g dill
18 horseradish root
10 Laurel leaves
Pickled mushrooms - a great dish for new year's table. We offer You a recipe for pickling mushrooms in Altaisky.
Mushrooms sort and clean, trim legs and steep in water for 2-4 days, changing the water at least once a day.
After soaking drain the mushrooms in a colander, give a little dry, then place in a bowl, bed layer for layer with salt and spices.
Cover the mushrooms with a cloth, put the circle and cargo.
After salting the amount of mushrooms should be reduced by approximately one third, and on a circle will appear brine (unless it came through the day after the start of pickles, increase cargo).
Salt mushrooms need 20-25 days, after that they are ready to eat.
