Apple jam with almonds and ginger
2 kg apples
2 kg sugar
3 lemon (grated zest)
2 cm ginger root
2 tbsp. shelled almonds
A thin layer cut with the peel apples, cut them in slices, removing the seed boxes.
Clean, chop the ginger root.
Put the apples with ginger in a saucepan layers, sprinkling sugar for 6-8 hours to leave.
After a time, pour in the apples with ginger 2 cups water, bring all to a boil, boil for 5 minutes over low heat, then remove from heat, leave on for 10-12 hours.
Then the apples with ginger again brought to a boil, cook for 15-20 minutes, 5 minutes before end of cooking adds a zest of lemon.
Almond slice, then fry in a dry pan for 3 minutes, put in the hot jam and stir.
