Beef tongue with sauce sardines
For the recipe You will need:
1 kg beef tongue
5 tbsp. sour cream
100 g butter
what kind of oil to choose? we'll show
50 g flour
1 tbsp. sardines - 5 pieces or anchovy paste
1 glass white wine
1 PCs lemon
salt
white pepper (freshly ground) to taste
Washed and thoroughly cleaned the language soak in salted cold water for 12 hours. Pour the language and put to cook in boiling salted water for about 2 hours. Ready to drop into cold water and remove it from the foil, cut into slices (2-3 per serving) and add to the skillet. The broth from cooking the language boiled down to 1 l, add the well-mixed with butter and flour, stir, put the broth sardine or anchovy paste and boil for another 20 minutes. Strain through a sieve to laid in a saucepan, pour the wine, juice from 1/2 lemon, sour cream, salt and pepper and cook over low heat for another 15 minutes. In the finished dish to put on top of fresh butter.
Serve with a side dish of boiled potatoes with chopped parsley and slices of peeled from the skin and seeds of the lemon.
