Skewers of lamb with mushrooms
750 g mutton flesh
150 fresh mushrooms
16 small tomatoes
1 sweet red pepper
1 sweet green pepper
2 cucumber
250 g pickled onion or shallot onion
parsley
Chop the meat into cubes, peel and wash the mushrooms, peppers, remove cores and cut into squares.
Strung all the ingredients on 8 skewers, alternating meat and mushrooms, sweet peppers and tomatoes (for barbecue use half the norm).
Grill over hot coals for 15 minutes, turning occasionally.
Should be served with greens, cucumbers, remaining tomatoes and chopped onion.
