Salad of celery root, carrots and beets
What you need:
1 onion - onion
2 tbsp. grape vinegar
parsley
4 olives, pitted
1 tbsp. mustard
1 garlic - clove
3 tbsp. olive oil
0,25 tuber root celery
carrots
1 beets
a handful of roasted pine nuts
Celery, carrots, and beets clean, cut into strips. Celery and carrot lowered to 4 minutes in boiling water, then with a slotted spoon to transfer into a bowl.
In the same water for 5 minutes to place the beets, then throw it in a colander. Give the vegetables to cool.
Peel the onions, chop. Olives, cut into thin circles. Garlic chop. Vinegar whisk mustard, olive oil and garlic.
Add the onion, olives and parsley. Season with salt to taste.
The cooled vegetables to fill the sauce and stir. Sprinkle with nuts.
