The vegetable salad with beets and carrots
1 beets
1 carrots
? tuber celery
Sauce:
5-6 olives pitted
2-3 tbsp. vegetable or olive oil
1-2 tbsp. wine or balsamic vinegar
1 garlic clove
? onions
? tbsp. mustard
parsley
Wash and peel the carrots, celery and beets, cut them in thin strips.
In a saucepan until boiling, bring the water, boil the carrots and celery for 4 min, remove with a slotted spoon, place in water the beets and cook for 4 minutes, take out, throw everything in a colander, allow to cool, put the vegetables in a salad bowl.
Finely chop the onion and garlic, cut into circles olives, chopped herbs in a bowl, combine vegetable and olive oil, add the mustard and vinegar, whisk or fork.
Add to the sauce onion, garlic, olives, stir thoroughly, add the sauce to the salad, stir before serving to make vegetable salad with beets and carrots olives and greens.
