Beef tongue in sour-sweet sauce
For the recipe you will need:
1 PCs beef tongue
1 PCs carrots
1 PCs parsley root
1 PCs onion
Bay leaf, peppercorns and salt to taste
for the sauce:
1/2 glass broth
1 tbsp. flour

1 tsp. honey
2-3 tbsp. butter
1 tbsp. vinegar (3%)
2 tbsp. raisins
1/2 glass prunes
The language clean, rinse well, fill with cold water and cook until tender roots of carrot, parsley, onion and pepper. Boiled tongue, remove from the pan, dip in cold water, peel and put in the hot broth.
Prepare the sauce: fry in butter and flour, add the honey and broth in which it was boiled tongue, pour in the vinegar and mix everything thoroughly. Prunes boil, remove seeds and slice into thin strips. Raisins smash in hot water. Put them in the sauce and boil for 8-10 minutes.
The language will lay out on a dish and pour the sauce over. Next place a garnish of pickled cucumbers, boiled potatoes and carrots.
