1 kg beef

4 onions

4 garlic cloves

3 egg yolk

6 tbsp. olive oil



3 tbsp. hot mustard

1 tsp. aromatic vinegar

1 tsp. freshly ground black pepper

1 tsp. salt

Cayenne pepper

Rinse, let the meat dry, RUB it with pepper and salt.

Peel the garlic, put through a press, to combine with 2 tbsp olive oil, RUB the meat mixture.

Put the meat on the foil on the baking sheet, placing it on the middle level, cook in a preheated 250 degree oven for 15 minutes, then another 15 minutes at 200 degrees, then leave the meat off the oven for another 20 minutes, then wrap in foil and remove. Cool meat in foil.

Preparation of sauce: the rest of the oil to combine with mustard and egg yolks, salt and pepper, add to taste Cayenne pepper, vinegar.

Slice the onion into rings, add to the sauce.
