Fish cutlets
500 g fish fillets
190 g water or milk

150 g stale wheat bread
80 ghee or vegetable fat
80 g bread crumbs

Crumble the bread and soak it in milk or water, wring out, when it swells.
Fish fillets cut into pieces, mix with bread, chop in a food processor, add the milk left over from soaking, pepper, salt, stir and whisk until smooth.

Before serving, garnish cutlets fried or mashed potatoes, boiled vegetables with butter. Garnish with parsley and lemon.
