4 tbsp. l. cilantro (finely chopped), 2/3 cup bread crumbs, 1/8 teaspoon ground saffron.
For the tomato sauce: 4 medium tomatoes (or one can of tomatoes in juice, 450 g) 1 onion (finely chopped), 1/4 cup olive oil 2 cloves garlic (finely chopped) 1 teaspoon paprika, 1/2 Harissa (Moroccan spice blend) or 1/4 tsp cayenne pepper, 1/2 teaspoon cumin, 1 teaspoon sugar.

Preparation: Pour the saffron 4 tsp of warm water. Cut the fish into large pieces and place in bowl of food processor with egg, herbs, bread crumbs and saffron water. Add 3/4 tsp salt and freshly ground black pepper, to taste. Milling into a thick paste.
